• Banana cupcakes with honey- cinnamon frosting

    cupcakes:

    1 1/2 cups all-purpose flourbananacupcakes1

    3/4 cup sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 stick (1/2 cup) unsalted butter, melted
    4 bananas, mashed
    2 large eggs
    1/2 teaspoon pure vanilla extract

    frosting:
    1 1/4 cups confectioners’ sugar
    1 stick room temperature unsalted butter
    1 tablespoon honey
    1/8 teaspoon cinnamon

    Preheat oven to 350*F and line a standard 12 cup muffin pan with paper liners. In a bowl, combine all the dry ingredients together. Make a well in center and add the mashed bananas, melted butter, eggs, and vanilla. Stir to just incorperate together. Divide the batter evenly between the muffin cups and bake for 25-30 minutes or until a toothpick inserted into the center of the cupcake. To make the frosting,  use an electic mixer and beat all together until smooth! If you want to garnish, add a sliced banana on top! So yummy!!!
