Crazy Carole’s favorite rum cake*
Cake:
1 cup chopped pecans
1 18-oz package yellow cake mix
1 (3 3/4 oz) package Jello-O Vanilla pudding and pie filling
4 eggs
1/2 cup cold water
1/2 cup oil
1/2 cup Captain Morgan Original Spiced Rum
Glaze:
1/4 cup butter
1/4 cup water
1 cup granulated sugar
1/2 cup (or more!!) Captain Morgans Rum
Preheat oven to 325*F. Grease and flour a 12 cup Bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together and pour batter over nuts. Bake for one hour. While cooking, make glaze. Melt butter in saucepan and stir in water and sugar. Boil 5 minutes stirring constantly. Remove from heat and stir in rum. When cake is done semi-cool and invert on serving plate. Prick the top and spoon the glaze over cake! Let it soak in the goodness and WOW it’s amazing!!!! A must-make!!
