• Eggies in a cup*

    8 slices thin sliced deli ham

    4 large eggs

    salt

    pepper

    minced parsley

    First things first, preheat your oven to 375*F.In a large muffin tin that is lightly sprayed with non-stick cooking spray, lay one slice of ham over the top of one of the muffin “holes” then lay another slice of ham the other way, making an “x”. Push the middle of the ham down into the tin to make a little cup. Crack an egg in the cup making sure not to break the yoke and put a little salt and pepper on the top.  Put in the oven and cook for 20-25 minutes until the whites have just set. When you take them out, just pick them up with your fingers (careful they’re hot!!) and put on a plate and add a little of the minced parsley for some color :) This is seriously PERFECT to impress with… how easy it this? Great if you’re having a bunch of people over for breakfast or bunch. Enjoy!

      Can you scramble the eggs and change this to make scrambled Eggies in a cup?
      Will the cooking time be the same?
      (My kids will only eat scrambled eggs)
