    5 slabs bacon, diced

    1 large onion, diced

    7 cloves garlic, minced

    1/2 stick butter

    3- 16 oz bags collard greens ( or 3 heads collard greens chopped)

    4 cups chicken stock

    1/4 cup white vinegar

    Seasoned salt

    salt

    pepper

    1/4 teaspoon red pepper flakes

    Collard greens are a New Year’s Day must! They’re good luck and this is my version. In a very large pot on medium high add the chopped bacon. Let cook until the fat starts to come out and the bacon starts to get cooked, about 5 minutes. Add the onion and garlic to the bacon fat and let cook, stirring for another 5 minutes. Once that is cooked, add the collard greens, 1 bag at a time with some of the chicken stock. When the collard greens start to wilt, about 5 minutes, add another bag with some more liquid and let wilt. After adding the last bag of the collard greens and the last bit of liquid add the vinegar, salt, pepper, season salt, and red pepper flakes.  Let simmer on low for about 25 minutes. Once cooked you’re ready to serve! I like to add a little more vinegar and some hot sauce… yum!
