    Italian Pot Roast*

    Olive oil
    2 1/2- 3 pound Chuck Roast
    1 stalk celery, cut in large chunks
    3 carrots, peeled and cut in large chunks
    4 onions, cut in quarters
    1 sprig rosemary, leaves taken off
    2 sprigs of oregano
    2 sprigs thyme
    14 ounce can Beef Broth
    14 ounce can petite diced tomatoes
