    Jambalaya*

    1/4 cup olive oil
    1 pound boneless, skinless chicken breast halves (about 2 chicken breasts)
    3 stalks celery, finely chopped
    1 green bell pepper, finely chopped
    1 medium onion, finely chopped
    1 pound andouille sausage, cut in 1 inch pieces

    4 eggs
    1/2 cup cream
    salt

    garlic powder
    1/4 pound pancetta, diced
